Title: Tropical Bran Bread Categories: Breads, And, Muffins Yield: 24 Servings 1 c Fiber one cereal, crushed 1 c Canned pineapple juice 1 ts Vanilla 1 3/4 c Flour 3/4 c Sugar 1/3 c Butter 2 ts Baking powder 1/2 ts Salt 1/2 ts Baking soda 2 Eggs Heat oven to 350°. Grease bottom only of loaf pan. Mix cereal, juice and vanilla in large bowl; let stand 10 minutes. Stir in remaining ingredients. Pour into pan. Bake 55-60 minutes or until toothpick comes our clean. Cool 10 minutes, loosen sides from pan. Remove from pan. Cool completely on rack before slicing. Store tightly wrapped in refrigerator up to 1 week. Variation: Stir in 1/2 cup raisin with the ingredients. Add 1/2 cup finely chopped walnuts.
