Tutu's Favorite Mango Bread
Title: Tutu's Favorite Mango Bread Categories: Breads, Family, Favorites, Fruit Yield: 1 Servings 2 c All-purpose flour 2 ts Baking soda 1/2 ts Salt 2 ts Cinnamon 3 lg Island eggs, well beaten 1 1/2 c Sugar, * 3/4 c Salad oil 2 c Mangoes, chopped 1/2 c Coconut, shredded 1/2 c Macadamia nuts, chopped 1/2 c Golden raisins * less if mangoes are very sweet Sift flour, soda, salt and cinnamon together, mixing well. Form a well in the center and mix in the rest of the ingredients, adding the fruit and nuts last. Pour into a greased and floured loaf pan and bake for one hour in a 350 degree oven. BANANA NUT BREAD You can use this recipe for Banana Bread by substituting 1 1/2 cups of mashed ripe bananas for the 2 cups of mangoes. Me ke aloha, Mary NOTES : E hele mai oukou e ai! (Come and eat!)
