Title: Vanilla Rice Pudding Categories: Cyberealm, Mom's best, Desserts Yield: 10 Servings 4 c 2% lowfat milk 1 Egg, well beaten 1 pk Jello vanilla pudding (not instant) 1 c Minute rice 1/4 c Raisins 1/4 ts Cinnamon 1/8 ts Nutmeg 1. Gradually stir milk and egg into pudding mix in a saucepan. 2. Add rice and raisins. Stir over medium heat until mixture just comes to a boil. Cool 5 minutes, stirring twice. 3. Pour into dessert dishes or serving bowl. Place plastic wrap or wax paper on surface of hot pudding. Refrigerate about 1 hour. 4. Sprinkle with cinnamon and nutmeg. Serve.
