Title: Vegetable Pecan Burgers Categories: None Yield: 1 Servings 1/2 c Chopped onions 1 tb Mixed garlic 1 tb Olive oil 1 pk (8oz.) mushrooms; sliced 1/2 c Toasted pecans 3 c Kellogg's rice krispies -cereal 1 c Cooked brown rice 1/4 c Finely chopped green pepper 1 c Shredded carrots 1/2 ts Salt 1/4 ts Black pepper 1/8 ts Cayenne pepper 2 Egg whites Vegetable cooking spray 1.In 12-inch nonstick frypan, over medium heat, saut‚ onions and garlic in oil 2 minutes. Add mushrooms and saut‚ 4 minutes longer or until mushrooms are just tender. Remove from heat. 2.Coarsely chop pecans in food processor, using metal blade. Add Kellogg's ® Rice Krispies® cereal, rice, green pepper, seasonings and mushroom mixture. Pulse process about 15 seconds or until mixture is a mealy consistency. Remove to mixing bowl and stir in egg whites. Divide mixture into 6 portions, about 1/2 cup each and shape into patties. Place on baking sheet coated with cooking spray.
