Title: Vegetarian Chili

Yield: 6 Servings

1 md Onion; thinly sliced
1/2 Green bell pepper; diced
2 tb Butter or margarine
1 Garlic clove; minced
2 tb Chili powder
28 oz Canned whole tomatoes
- crushed
3 c Cooked/canned kidney beans
Salt, pepper
1 1/2 c Shredded cheddar cheese
3 c Hot cooked brown rice
1/2 c Chopped green onions

Saute onion and green pepper in butter until tender. Stir in garlic, chili
powder, tomatoes and beans. Season to taste with salt and pepper. Simmer 10
minutes. Add cheese and cook, stirring, until melted. Spoon into individual
mounds of rice. Garnish with green onions.
