Title: Vegetarian Pasta Sauce Categories: None Yield: 4 Servings 3 md Leeks; cut into thin slices 1 lg Onion; diced 1 lg Can tomatoes; chopped, (or -use fresh tomatoes if you -have the time to peel -them!) Salt Pepper Nutmeg Oregano Source: family recipe Fry the onion in oil, then add the sliced leek and fry for another few minutes. Add tomatoes and simmer for 5-10 minutes. Season to taste. If you're not a vegetarian you could also add some beef stock, just for the taste... (If this gets too fluid, sprinkle with some flour to thicken the sauce.)
