Title: Vermont Spring Chicken Categories: Poultry, Maple, Val's Yield: 6 Servings 1 Chicken,2-1/2to 3 lb, cut up 1/4 c Butter, melted 1/2 c Maple syrup 1/2 ts Grated lemon rind 1 ts Salt 1 ds Pepper 1/4 c Chopped almonds 2 ts Lemon juice Place chicken pieces in shallow buttered baking dish. Mix remaining ingredients and pour evenly over chicken. Bake uncovered 50-60 minutes at 4008F. Baste occasionally. Delicious on bed of rice.
