Western Beans and Rice
Title: Western Beans and Rice Categories: Bean, Pasta/rice Yield: 6 Servings 1 c Long-grain rice; uncooked 1/2 ts Olive oil 1 c Onions; chopped 1 c Celery; sliced 1 Clove garlic; minced 15 oz Pinto beans; drained and -washed 8 oz No-salt-added tomato sauce 1/2 c Water 1 tb Ketchup 1 ts Chili powder 1/4 ts Hot pepper sauce Prepare rice according to package directions. In a skillet, heat oil over medium heat. Add onions, and celery. Cook and stir until crisp-tender. Add garlic, pinto beans, tomato sauce, water, ketchup, chili powder, and hot pepper sauce. Heat thoroughly, stirring occasionally. Serve over hot rice.
