Wild Rice- Green Apple Salad
Title: Wild Rice- Green Apple Salad Categories: Salads, Rice & grai Yield: 10 Servings 2 c Wild rice; uncooked 2 c Chicken broth 4 c Water 1 ts Salt 2 c Golden raisins 1/3 c Sherry 1 tb Grated orange rind 1/2 c Orange juice 1/2 c Commercial Caesar salad -dressing 1/4 ts Pepper 2 Granny Smith apple; chopped 1 bn Green onion; sliced 1 c Sunflower kernels Wash wild rice in 3 changes of hot water; drain. Combine wild rice and next 3 ingredients in a saucepan; bring mixture to a boil. Cover, reduce heat, and simmer 50 to 60 minutes or until rice is tender; drain, if necessary, and set mixture aside. Combine raisins and sherry; set aside. Combine orange rind and next 3 ingredients, set aside. Combine rice, reserved raisin mixture, apple, green onions and sunflower kernels, Add orange rind mixture; toss gently. Cover and chill at least 8 hours. Stir before serving.
