Title: Yangtze Chicken Categories: Barbeque, Low fat Yield: 16 Servings 2 lb Boneless skinless chicken -breasts; cut in 2-inch -cubes 1 Pineapple; cut in 2-inch -chunks Marinade: 1/2 c Soy sauce 3/4 c Ketchup 1 c Dry white wine 1 c Orange marmalade 4 tb Honey 16 Skewers Mix marinade ingredients in large bowl. Add chicken and mix well to coat. Marinate for at least 1 hour in refrigerator. Alternate chicken and pineapple pieces on skewers. Grill 1 to 2 minutes on each side or to desired doneness.
