Title: Yellow Angel Food Cake Categories: Cake Yield: 8 Servings 8 Egg whites (8 equals 1 cup) 1/2 ts Salt 1 ts Cream of tartar 1 1/3 c Sugar 6 Egg yolks 1/2 Orange rind; grated 1 1/4 c Cake flour Beat egg whites with salt until foamy. Add cream of tartar & beat until stiff. Fold in sugar. Beat egg yolks until thick & lemon colored. Fold about 1/3 of egg white mixture into yolks. Blend well, using folding motion, and add this to remaining egg whites. Add the grated orange rind & fold in flour, sifted once before and several times after measuring.
