Yellow Squash Casserole
Title: Yellow Squash Casserole Categories: Casserole Yield: 4 Servings 2 lb Fresh; yellow squash 2 tb Butter or margarine 1 sm Onion; chopped fine 1 sm Bell pepper; chop fine 1 Egg 1 c Cheese crackers; crushed 3 -(up to) 4 sl Bacon 1/2 ts Salt (to taste) Red pepper to taste Scrub squash and cut in rings. Melt butter or margarine, add seasoning and squash and salt. Cook until tender, about 10 minutes. Add half the crackers and beaten egg. Place in buttered casserole.
