Title: Zesty Bean Salad Categories: New, Text, Import Yield: 1 Servings 1/2 c Olive oil 1/3 c Freshly squeezed lime juice 1/4 c Chopped cilantro 1 ts Ground cumin Salt Freshly ground black pepper 2 c Cooked lima beans 1 c Cooked black beans 1 c Cooked red kidney beans 1 md Red bell pepper, cored,; -seeded and diced 1 md Yellow bell pepper, cored,; -seeded and diced 1 c Chopped red onion 2 c Cooked yellow or white sweet -corn kernels 2 Jalapeno peppers,; seeded -and minced Fresh cilantro sprigs In a large bowl, whisk together olive oil, lime juice, cilantro, cumin, salt and pepper. Add lima beans, black beans, red kidney beans, red and yellow bell peppers, onion, corn and jalapeno peppers. Toss gently. Chill until ready to serve. Serve garnished with cilantro sprigs.
