Title: Zucchini Bread #03 Categories: Bread Yield: 16 Servings 3 Eggs; well beaten 1 3/4 c Sugar 1 c Corn oil 2 c Grated raw zucchini; packed; -do not peel! 2 ts Vanilla 3 c Unsifted flour 1 ts Salt 1 ts Baking powder 2 tb Grated orange rind 2 ts Cinnamon 1/2 c Raisins 1/2 c Pecans; chopped Sift dry ingredients. Mix with remaining ingredients. Divide batter between 2 greased and floured loaf pans. Bake at 350 degrees F for 45 minutes to 1 hour, or until done.
