3 c Grated zucchini
1 c Salad oil
1 1/2 c Sugar
3 Eggs; beaten
1 ts Vanilla
3 c Flour
1 1/2 ts Baking powder
1 ts Baking soda
1 1/2 ts Cinnamon
1 ts Salt
1/2 ts Ginger
1 c Chopped nuts
1 c Raisins

Combine first 5 ingredients. Sift together next 6 ingredients, and stir to
blend. Add nuts and raisins, and beat 4 minutes. Place in greased loaf
pan and bake 1 hour at 350F This recipe freezes well.
