Title: Zucchini-Crusted Pizza

Yield: 4 -6 serving

3 1/2 c Grated zucchini--; (grate it
-coarsely)
3 Eggs; beaten
1/3 c Flour
1/2 c Grated mozzarella cheese
1/2 c Grated parmesan cheese
1 tb Fresh basil leaves;
-minced--, (if you don't
-have fresh, use 1/2
-teaspoon dried)
Salt and pepper

Salt zucchini lightly and let stand for 15 minutes. Squeeze out all excess
moisture.

Combine all crust ingredients. Spread into an oiled 9 x 13-inch baking pan.
Bake 20 to 25 minutes, until surface is dry and firm. Brush the top with
oil and broil it, under moderate heat, for 5 minutes.

Pile on all of your favorite toppings. Bake about 25 minutes.
