Title: Cathy's Tomato-Bean Salad Categories: 4 star, Salads, Taste of ho, Tomatoes, Healthwise Yield: 8 Servings 1 cn Garbanzo beans; rinsed and -drained (15 ounces) 4 lg Ripe tomatoes; thickly -sliced 1 c Thinly sliced red onion 1 cn Medium pitted ripe olives; -drained and halved (6 -ounces) 1/2 c Olive oil 5 lg Fresh basil leaves; snipped -or, up to 6 1 tb Dried basil 1/2 ts Dried oregano 1/4 ts Pepper 1/8 ts Garlic powder In a large salad bowl, layer beans, tomatoes, onion and olives. Combine all remaining ingredients; pour over vegetables. Cover and chill at least 3 hours or overnight. Serve chilled or at room temperature. Yield: 8 servings.
