Title: Chunky Chicken Mustard Salad Categories: None Yield: 1 Servings 1/4 c Red wine vinegar 1/3 c Prepared mustard 1 tb Dijon mustard 1 Garlic clove; minced 1/2 c Vegetable oil 1/4 ts Each salt and pepper 4 c Diced cooked chicken breast 1 Cucumber; unpeeled and diced 1/3 c Chopped red onion 2/3 c Chopped dill pickles 4 Celery stalks; sliced 8 c Mixed salad greens Taken from the cookbook "365 Easy One Dish Meals" {These are the 3 recipes that I have prepared, and I recommend them for any picnic, church luncheon, or just a quick and light supper.} In a large bowl, combine vinegar, mustard, Dijon mustard, garlic, oil, salt and pepper. Mix well. Add chicken, cucumber, red onion, pickles, and celery. Toss to coat with dressing. Refrigerate at least 2 hours. Serve on salad greens.
