Title: Italian Chicken Salad Categories: Italian, Chicken, Salads Yield: 6 Servings 1 Whole chicken, boiled 1 c Onions, coarsely chopped 2 tb Wine vinegar 1 ts Oregano 1/2 c Black olives, pitted, crush 1 c Celery, coarsley chopped 1/2 c Stuffed olives, sliced 4 tb Olive oil 1 ts Sugar Salt/pepper Strain chicken. Reserve chicken stock for another use. Debone and remove skin from chicken. Shred the meat. Saute onions, and celery in olive oil for a short time.
