Lemon Chicken


Title: Lemon Chicken

Yield: 1 Servings

1 Frying chicken; (2 1/2 lb.)
-cut up, skin removed (or
-equal amount of chicken
-breasts)
1 ts Salt
1/4 ts Freshly ground pepper
1/4 ts Garlic powder or 1 clove
-fresh garlic; minced
1 ts Dried basil
1/3 c Fresh lemon juice
1/4 c Water
1 1/2 ts Grated lemon peel
3 Thin Slices lemon for
-garnish; (3 to 4)

Preheat oven to 400 degrees. Sprinkle chicken pieces with salt, pepper and
garlic powder. Place pieces in a shallow baking pan with skin side down.
Combine remaining ingredients, except lemon slices and pour over chicken.
Bake, uncovered, for 20 minutes. Turn chicken and baste with pan drippings.
Bake for 30-40 minutes more, until chicken is tender. Serve on a platter,
garnished with lemon slices. This is also great cold!!
