Title: Light Chicken Cordon Bleu Categories: Chicken/tur, Eat-lf mail, Low fat, Main dishes Yield: 6 Servings 1/2 c Dry Bread Crumbs; Seasoned 1 tb Parmesan cheese; grated 1 ts Fresh parsley; chopped 1/2 ts Paprika 1 Egg white 1 1/4 lb Skinless boneless chicken -breast; sliced thin 6 oz Lowfat Swiss Cheese 6 oz Turkey ham; cut in 6 slices In shallow bowl, combine bread crumbs, Parmesan, parsley flakes and paprika. In another shallow bowl, beat egg white lightly; set aside. On each Perdue Fit 'n Easy fresh skinless and boneless Oven Stuffer Roaster thin-sliced chicken breast slice, place 1 slice of cheese and 2 overlapping slices of ham; roll up, jelly-roll style, and secure with toothpick. Dip each roll in egg white and then bread crumb mixture, coating both sides. In microwave-safe utensil, arrange chicken rolls, seam side down, in circular pattern. Cover with wax paper; microwave at MEDIUM-HIGH (70% power) 5 minutes. Rearrange chicken rolls; cover with a double thickness of paper towels. Microwave at MEDIUM-HIGH 8 minutes. Let stand, uncovered, 5 to 10 minutes before serving. Little changes can make big differences in nutrition.
