Title: Mexican Casserole Categories: Meats, Casseroles Yield: 4 Servings 1 lb Ground meat 1 cn Tomatoe sauce 1 cn Corn whole or cream style 1 cn Ranch style or kidney beans 1 pk Jiffy corn bread mix 1/2 c Gratted chedar cheese Jalapinos if desired 1 Onion chopped 2 Cloves garlic chopped In pan brown seasoned ground meat(season with salt and pepper or Tony Chercher's seasonin) with onion and garlic. Drain. Put back in pot and add tomatoe sauce, corn and beans, mix. Pour into casserole dish. Prepare corn bread mix according to box and add cheese and jalapinos. Pour over meat mixture and bake in oven according to corn bread mix. Can be frozen. Source: Off a can of Trappeys kidney beans.My family loves it.
