Title: Mexican Corn Bread Categories: None Yield: 1 Servings -----------------------------MIX AND SET ASIDE----------------------------- 1 c Yellow corn meal 1 1/4 c Flour 2 Eggs 1 c Sweet milk 1/2 ts Soda 3/4 ts Salt 1/2 c Bacon drippings 1 cn (small) cream style corn ----------------------------------PREPARE---------------------------------- 1 lb Hamburger, sauteed and -drained 1 lg Onion, chopped 1/2 lb Sharp cheese, grated 1 cn Jalapeno peppers grease two 8 inch skillets; heat. pour 1/2 of batter in skillets, then sprinkle 1/4 of cheese, 1/4 meat, 1/4 onion and repeat this process until all is used. add peppers last. pour remaining batter on top and bake at 350 for 45 to 50 minutes.
