Mexican Fruit Cake
Title: Mexican Fruit Cake Categories: None Yield: 1 Servings 1 cn (20 oz) crushed pineapple 2 c Flour 2 c Sugar 2 ts Baking powder 2 Eggs 1 c Chopped pecans -----------------------------------ICING----------------------------------- 3 Container; (4 oz) regular or -reduced fat cream cheese 3 c (or more) confectioner's -sugar 1/2 Stick melted butter or -margarine 1 1/2 ts Vanilla mix all ingredients together. bake either in a 9 x 13 pan (approx. 40 min.) or in 2 round layer pans(approx. 18-20 min.) at 350 degrees F. ICING: mix together. add milk a little at a time to make a glaze the consistency you would like. Spread on top or between layers and on top.
