Title: Mexican Meatloaf Categories: Beef, Pork and ha Yield: 6 Servings 2 lb Ground beef 2 cn (8oz) tomato sauce 1 cn (7oz) Mexican whole corn; -drained 1 c Corn chips; finely crushed 1/2 c Onion; chopped 1/2 c Green olive; chopped 1 cn (4oz) green chile 2 Eggs; lightly beaten 1 tb Chili powder 1 ts Garlic salt 1/4 ts Cumin In bowl, mix beef, 1 can tomato sauce, corn chips, corn, onions, olives, chiles, eggs, 1/2 tablespoon chili powder, 1/2 teaspoon garlic salt and 1/8 teaspoon cumin. Blend well. Firmly pack meat mixture into loaf pan. Bake at 375 degrees for 1 hour, drain fat. Combine remaining tomato sauce, chili powder, garlic salt and onion. Pour over loaf bake 7 minutes more.
