Title: Mexican Medley Categories: Casseroles, Mexican Yield: 6 Servings 1 lb Bulk sausage or chorizo 1 c Finely chopped onion 2 cn Stewed tomatoes 1 c Light sour cream 3/4 c Water 1 ts Salt 1 ts Chili powder 8 oz Uncooked noodles 2 ts Ground cumin powder 3 Garlic cloves minced 1 sm Onion minced In large heavy skillet cook and stir sausage, onion, and garlic until meat is brown and onion is tender. Drain off excess fat and stir in remaining ingredients. Cover and simmer 30 minutes until noodles are tender. Garnish with fresh parsley and cilantro.
