Title: Mexican Rice Categories: None Yield: 1 Servings 2 c White rice cooked 2 c Sour cream (I use light) 2 c Monterey jack cheese, -shredded 2 cn (4 oz.) of green chilies, -whole or chopped are fine Mix the sour cream w/ the rice. In an 8x8 casserole dish, layer rice mixture, green chilies, and cheese, two times each, ending w/ cheese on top. Bake at 350 degrees for about 30 minutes. Very yummy!
