Title: Mexican Wedding Cakes Categories: Cookies, Holiday Yield: 48 Servings Mrspatriciadwigans@juno.com 1 c Margarine; softened Or butter 1/2 c Powdered sugar 1 ts Vanilla extract 2 1/4 c Flour,all-purpose 1/4 ts Salt 3/4 c Nuts; finely chopped Heat oven to 400 degrees. Mix softened margarine or butter, 1/2 cup powdered sugar and the vanilla thoroughly. Work in flour, salt and nuts until dough holds together. Shape dough into 1-inch balls. Place balls on ungreased cookie sheet. Bake until set but not brown, 10-12 minutes. While still warm, roll in powdered sugar. Cool then roll once again in powdered sugar.
