Title: Mile High Strawberry Pie Categories: Pie Yield: 8 Servings 1 c Sugar 2 Egg whites 10 -(up to) 14 oz Frozen strawberries; -partially thawed 1 ts Vanilla 1 tb Lemon juice 1 pn Salt 1 c Whipping cream; whipped -stiff 1 (9-inch) pastry shell or -crumb crust; baked Combine sugar, egg whites, strawberries, vanilla, lemon juice and salt in a large mixing bowl. Beat mixture, starting on low speed and gradually increasing speed, for about 15 minutes until mixture is thick, fluffy and holds peaks. Fold in whipped cream and pile mixture into baked pie shell. Freeze several hours. After pie is frozen, wrap in foil or plastic wrap. Can be frozen up to 3 weeks. To serve, remove from freezer, slice and serve immediately. Makes one 9 inch pie that serves 8.
