Mixed Vegetable Salad
Title: Mixed Vegetable Salad Categories: None Yield: 8 Servings 1 pk (10 oz) frozen mixed -vegetables 1 cn (15 oz) kidney beans; rinsed -and drained 1/2 c Chopped celery 1/2 c Chopped onion 1/2 c Chopped green pepper 3/4 c Sugar 1/2 c Vinegar 1 tb Cornstarch Here is a recipe from Taste of Home, which I have made several times and is real good. Cook the mixed vegetables until crisp tender. Drain and place in a large bowl. Add kidney beans, celery, onion, and green pepper. In a saucepan over medium heat, bring sugar, vinegar, and cornstarch to a boil, stirring constantly, until thickened. Cool slightly. Pour over vegetables and toss. Refrigerate. Serves 8.
