Molasses Rice Pudding
Title: Molasses Rice Pudding Categories: None Yield: 1 Servings 2 Egg whites, or enough egg -replacer to equal 2 eggs 1 1/2 c Skim or nonfat milk 1 1/4 c Cooked rice 1 c Raisins (I do not like -raisins, so I don't put -them in) 1/4 c Molasses 1 ts Vanilla (I ALWAYS add more!) 1/4 ts Cinnamon (more or less to -taste) 1/2 ts Nutmeg (more or less to -taste) (from Mastercook--modified by me) Preheat oven to 350 degrees. In a medium baking dish, mix eggs and milk well. Add all th other ingredients, and mix well. Cover with aluminum foil and bake for about 1 hour, or until the mixture is firm. serve warm or chilled.
