Title: Morning Glory Muffins

Yield: 12 Servings

2 tb Vegetable oil
1/4 c Fructose
2/3 c Fat-free yogurt; plain
1 Egg white
2 c Flour
1 1/2 ts Baking powder
1/2 ts Baking soda
1/8 ts Salt
8 oz Crushed pineapple in juice;
-reserve juice
1 md Orange; finely chopped
1/2 md Mango; finely chopped

Mix all ingredients, adding fruit last. Spooin into muffin tims that have
been coated tieh non-stick spray. Bake 15 minutes at 350 degrees. Makes
12 muffins. 1 serving = 1 muffin

Exchange: 1 starch/bread, 1/2 fruit, 1/2 fat
