1 Egg
1 c Milk
2 tb Sugar
3 c Baking mix

1. Beat together egg, milk and sugar.

2. Add baking mix and stir just until moist.

3. Spoon into greased muffin pans.

4. Bake at 425 deg F. for 20 minutes.

Variations: Add 1/2 cup additional ingredients selected from one or more of
the following:

chopped nuts or seeds

fresh fruit, such as chopped apples or blueberries

dried fruit such as raisins, prunes or apricots

grated vegetables, such as carrots or zucchini
