Title: Pea Salad Categories: Peas, Vegetables Yield: 1 Servings 1 pk Small peas; (10 oz.) 1/3 c Chopped celery 4 Green onions; chopped 1 c Cashews; chopped 1/2 c Sour cream 10 sl Bacon; cooked Salt and pepper to taste In a 1-quart casserole, place 2 tablespoons of water and 1/2 teaspoon of salt; add peas. Cover with plastic wrap and micro-cook on High for 5 to 6 minutes. Stir peas after 3 minutes. Now micro-cook bacon on rack or paper on High for 8 to 9 minutes. Let peas cool a little and drain off any remain- ing liquid. Mix in with the peas the celery, green onions, crumbled bacon and sour cream. Refrigerate. Add the cashews immediately before serving.
