Pineapple Bread

--------------------------IN A LARGE BOWL COMBINE--------------------------
2 tb Canola oil
2 c Sugar
3 Eggs
2 ts Vanilla
1 cn (20 oz) pineapple; crushed
1 c Unsweetened applesauce

----------------------------------THEN ADD----------------------------------
2 1/2 c Unbleached flour
3 ts Baking soda
2 ts Baking powder

--------------------------MIX UNTIL SMOOTH AND ADD--------------------------
1 c Low fat buttermilk
1 tb Ground cinnamon
2 c Unbleached flour;
-(additional)

Spray bundt pans with non-stick cooking spray. Fill each 2/3s full of
batter and bake in a 325 degree F oven for 45 minutes. Makes 3 small bundt
pans; or 1 large and 1 small; or 3 loaf pans.
