Leave the dough for 1-2 hours to rise Trim excess fat off duck breasts. Spread some spices on skin and seal in a hot frying pan until golden brown. Place the duck in the oven and bake in the oven at 200øC/400øF/gas mark 6 until just cooked. Remove the duck and pour the duck fat into a saucepan. Place the honey into a pan and add the mustard and slowly caramelise. Pour the mixture over the duck breast and return to the oven for 2-3 minutes to cook through. Knead the dough and roll out. Bake in the oven for 10 minutes. Meanwhile quickly make the cucumber sauce. Scrap out the seeds from the cucumber, chop and mix with olive oil. Add some plum sauce.
