1 lb Lentils
2 c Vegetable stock
2 tb Coriander seeds
2 tb Cumin seeds
1 ts Dried oregano
1 ts Dried basil
2 Bay leaves
3 sm Red potatoes; diced (3 to 4)
1 lb Fresh spinach; thoroughly
-rinsed
; and chopped
3 c Peeled and diced butternut
-squash
1 tb Olive oil
1 lg Onion; chopped
1 Celery stalk; chopped
1 Carrot; peeled and thinly
; sliced
4 Garlic cloves; crushed
Salt and freshly ground
-black pepper to
; taste

Place all the ingredients in a large pot and bring to a boil.

Lower the heat to a simmer and cook, covered, about 45 to 50 minutes.
Remove the bay leaves before serving.
