Edith's Economical Pudding
Title: Edith's Economical Pudding Categories: 2bl Yield: 1 servings 60 g Butter or cooking margarine 1/3 c Sugar 1 Egg 1/2 c Milk Grated rind of 1 lemon 1 1/2 c SR flour 1 c Sultanas -------------------------------CARAMEL SAUCE------------------------------- 3/4 c Lightly packed brown sugar 1 tb Golden syrup 1 c Water 60 g Butter 1/2 Lemon; juice of Put butter, sugar, egg, milk, lemon rind and flour into a basin. Beat with a wooden spoon for a minute or so. Mix in sultanas then put into a greased casserole dish. Put sugar, golden syrup, water and butter into a saucepan and stir over a medium heat to dissolve the sugar, then boil for 2-3 minutes. Add lemon juice, then pour syrup over the cake mixture. Bake in a moderate oven for 1 hour. Serve hot or cold with plain boiled custard. Serves 6. Converted by MC_Buster.
