Title: Eggless "Egg" Salad Categories: Salads, Vegetables, Tofu, Vegetarian Yield: 4 servings 1 lb Tofu; lowfat; sliced, drain -well w/towels 1 tb Onion; finely chopped 2 tb Celery; finely chopped 1 tb Nonfat Mayonnaise; +1 tsp 1 tb Sweet Pickle Relish 1 ts Vinegar 1 ts Mustard Powder 1 1/2 ts Sugar 1/2 ts Turmeric 1/8 ts Dried Dill Weed 2 ts Dried Parsley Salt; to taste Pepper; to taste Place drained tofu in a lg. bowl and crumble with a fork. Stir in onion and celery. In a sm. bowl, combine remaining ingredients, mixing well. Add to tofu mixture. Mix well.
