Title: Flax Banana Bread

Yield: 20 servings

1 3/4 c Flour
3/4 c Flaxseed granules; or ground
-flax
1/2 c Sugar
1 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
2 lg Eggs; or 1/2 cup egg
-substitute
1/3 c Applesauce
1 c Bananas: 2-3 ripe; mashed
1/2 c Chopped walnuts
1/4 c Brown sugar
1/2 ts Cinnamon

Preheat oven to 350F.

1. In a large bowl mix together flour, flaxseed, sugar, baking powder,
baking soda and salt.

2. In a separate bowl beat together eggs and applesauce. Add dry
ingredients and mashed banana alternately to egg and oil mixture, stirring
until dry ingredients are moistened.

3. Pour into a greased loaf pan. Combine nuts, brown sugar and cinnamon and
sprinkle over batter in loaf pan. Pat down gently into batter. Bake for
55-60 minutes.

YIELD: 1 loaf/20 slices; 1 slice = 119 calories, 1g fat (8%), 22mg
cholesterol Exchange = 1 starch + 1 fruit
