Title: Fresh Tomato Juice Categories: Beverages, Vegetables Yield: 1 Servings 1 lg Ripe tomato Salt, pepper, sugar and/or -lemon (optional) Blanch tomato in boiling water for 30 seconds. Place in cold water for 1 minute, then peel skin. Place a sieve over a bowl; cut tomato open over sieve. Remove seeds by squeezing tomato over sieve or scooping seeds out with spoon. In food processor or blender, place tomato and juice from bowl; blend until smooth. The juice will be slightly warm and a lighter color than the canned variety. Taste juice and add salt, pepper, sugar or lemon slice, if desired. Serve immediately or chill thoroughly. Makes 1 serving.
