Title: Frijoles Con Crema (Bean Dip)

4 Firm ripe tomatoes; chopped
-finely
10 Sprigs fresh coriander;
-chopped finely
1/2 Onion; chopped finely
2 Green chillies; chopped very
-finely
; (optional)
1 Lime or lemon; juice of
1/2 ts Salt and black pepper
2 ts Cooking oil
300 g Frijoles Refritos; (re-fried
-beans)
; (10oz)
50 g Cheddar cheese; grated (2oz)
50 g Cream cheese; (2oz)
1 150 millilit single cream;
-(5 floz)

Mix the tomatoes, coriander, onion, chillies, lime or lemon juice, salt and
pepper together and set aside.

Heat the oil, add the re-fried beans and stir them for 2 minutes until they
are bubbling. Remove from the heat and add the cheeses, stirring constantly
until they melt.

Add the tomato mixture and single cream and serve at room temperature.
