Grilled Spam Ensalada
Title: Grilled Spam Ensalada Categories: Salads/dres, Pam, Spam1 Yield: 4 servings 1 cn Spam luncheon meat - (12 -oz); cut into 1/2" strips 1 Onion; cut into wedges 3 Jalapeņo peppers; chopped 2 c Sliced jicama 2 c Peeled; sliced tart apples 2 c Sliced zucchini 1/2 c Oil 2 tb Chi-Chi's hot salsa 1 tb Vinegar 1/2 ts Coarsely-ground black pepper In skillet over medium-high heat, cook Spam, onion, and jalapeņo peppers 7 to 10 minutes or until browned. In bowl, combine jicama, apple and zucchini. In small bowl, whisk together oil, salsa, vinegar, and pepper. Pour dressing over jicama mixture; toss to combine. To serve, place vegetable mixture around warm Spam mixture. This recipe yields 4 servings.
