Title: Guadeloupe Chicken Salad

Yield: 4 servings

2 c Cut-up chicken; (cooked)
1/4 c Sour cream
1/4 c Mayonnaise
1/4 c Finely chopped carrot
2 tb Cilantro
2 tb Capers; (drained)
2 tb Finely chopped red bell
-pepper
2 tb Lemon juice
1/4 ts Ground cumin
1/4 c Finely chopped onion
4 tb TABASCO green pepper sauce
Salt to taste
1 Avocado; peel, cut in wedges
Lettuce leaves
Paprika

Toss all ingredients except avocado, lettuce and paprika. Serve on lettuce
leaves with avocado wedges. Sprinkle with paprika. Add more TABASCO® green
sauce for spicier fare, if desired. Makes 4 servings.
