Healthy Muffins


Title: Healthy Muffins

1 1/2 c Hot water or apple juice
1 c Applesauce
1/2 c Honey
1/2 c Raisins
1 c Unbleached white flour
1 c Whole wheat flour
1 c Oat bran
2 c Oatmeal
1 1/2 ts Baking soda
1 ts Cinnamon
1/2 ts Pumpkin pie spice

Preheat oven to 350 degrees. Mix hot water, applesauce, honey, and raisins
together and let rest for 10 minutes.

Combine all the dry ingredients in a large bowl and mix well. Add the wet
ingredients to the dry and mix. Do not overbeat. Pour into a nonstick
muffin pan and bake for 35 minutes. Let rest in the muffin pan for 5
minutes after removing from the oven to make them easier to remove from the
muffin pan.
