Title: Hoisin Vegetarian Noodles Categories: Food networ, Food1 Yield: 4 servings 1 pk Rice vermicelli 2 Eggs 200 g Beansprouts 200 g Pak choy 3 tb Hoisin sauce 2 tb Chilli sauce 1 tb Light soy sauce 2 tb Vegetable oil 1 tb Garlic puree 1/2 ts Black pepper Soak the vermicelli in warm water until soft, and drain. Chop the pak choy into thin strips. Heat the oil and fry the garlic until light brown. Add the beansprouts, vermicelli, pak choy and stir fry over a high heat for 2 minutes. Crack the eggs into the pan and toss well with the vermicelli. Add all the seasonings and stir fry rapidly for one minute. Serve with chopped spring onions.
