Title: Lemon Ricotta Pudding

Yield: 4 servings

375 g Ricotta cheese
1 c Low-fat natural yoghurt
1 Egg
2 tb Lemon juice
2 ts Finely grated lemon rind
2 ts Sugar
1 ts Vanilla essence

1 . Place ricotta, yoghurt, egg, lemon juice, lemon rind, sugar and vanilla
essence in a food processor or blender. Process until smooth.

2. Divide mixture between four 3/4 cup ramekins. Bake in a moderate oven
(180C) for 25 minutes or until firm. Serve warm or cold.
