Lemony Fish Croquettes
Title: Lemony Fish Croquettes Categories: Sainsbury's, Sainsbury5 Yield: 4 servings 500 g King Edward or Maris Piper -potatoes; cooked and mashed ; (1lb) 375 g Cod or haddock fillet; -cooked, skinned and ; flaked (12oz) 2 tb Freshly chopped parsley Grated rind and juice of 1/2 -lemon 2 Eggs; size 3 Salt and freshly ground -black pepper 25 g Plain flour; for shaping -(1oz) 125 g Fresh wholemeal breadcrumbs; -(4oz) Oil for frying ----------------------------------TO SERVE---------------------------------- Lemon wedges and tartare -sauce Mix together the potato, fish, parsley, lemon, 1 egg yolk and seasoning to taste. Chill the mixture for easier handling. Shape the mixture into 8 ''sausage'' shapes using well floured hands. Beat together the remaining egg and egg white and use to coat the shapes. Coat evenly with the breadcrumbs, then fry in batches in a little oil for 6-8 minutes, turning occasionally until crisp and golden. Drain on kitchen paper and serve immediately with lemon wedges and tartare sauce. Converted by MC_Buster. NOTES : Delicious crunchy sticks of potato and fish with a twist of lemon.
