Title: Lime Rice

Yield: 2 servings

1 c Low-sodium chicken broth
1 c Water
2 tb Lime juice
1 c Rice
1 ts Grated lime zest

Bring chicken broth, water and lime juice to boil in medium saucepan. Stir
in rice, return to boil, then lower heat and simmer, covered, until rice is
tender, 15 to 20 minutes. Fluff rice with fork and stir in lime zest.
Yields 2 servings.

grams carbohydrates; 6 grams protein; 0 fiber
