Mandarin Muffins
Title: Mandarin Muffins Categories: Breads Yield: 1 Recipe -Sue Woodward 1 cn 11-oz. mandarin orange seg- -ments 1 tb Orange extract 2 ts Baking soda 1/2 ts Salt 1/4 c Sugar 8 oz Sour cream 2 c Flour 2 ts Baking powder 1/2 c Brown sugar 1 Egg 1/3 c Shortening; melted Drain orange segments, reserving liquid. Cut segments into halves. Add orange extract to the reserved liquid and add to orange segments. Combine all dry ingredients in a lg. bowl. In a separate bowl, combine egg, sour cream, and melted shortening. Add to dry ingredients. Add oranges and juice, and mix just until moistened. Spoon into greased or paper-lined muffin tins, filling 2/3 full. Bake at 400~ for 20 to 25 mins.
